When a power outage disrupted our cooking plans, we had no choice but to power through.
For days, I had been looking forward to my daughter’s amazing Thai coconut soup for our Sunday dinner. It was a perfect day for it too—blustery and cold with the trees outside whipping around in the wind. But it was the wind that fouled up our menu. You guessed it. The power went out. So much for our plan.
In our pre-Whole30 days, we would have been scouting out the nearest Panera drive-thru with its lights still on. But not even an act of nature could throw us off course. We headed to Trader Joe’s and put together a yummy assortment of stuff that didn’t need to be cooked. Then we came home and enjoyed a lovely impromptu candlelight picnic.
This morning the power is back on, and I get one more day to anticipate our delicious soup. I might even share the recipe with you tomorrow.
