One of the hardest things for us to give up on the Whole30 plan is having something…anything…to put in our morning coffee to soften the impact.
Please forgive me, grammar police and Shakespeare purists, for my misuse of the word “wherefore” in my title. I’m going with the contemporary, understood-meaning the word acquired at some point between Shakespeare penning the iconic balcony scene from “Romeo and Juliet”, and me sitting here penning my blog post. Juliet wondered “why”, and I wonder “where.” All I can say is, I hope my answer arrives with a happier ending.
In my quest for an unsweetened coconut milk that’s Whole30-friendly, the closest I can find contains two ingredients not found on either the “acceptable” or “unacceptable” list, or in any Whole30 resources that I can find. I did, however, find a post with a recipe for homemade coconut milk. I might just give that a try.
So, to quote the bard again (sort of), “my kingdom for a glass of pure coconut milk!”
