The weather is reaching for spring, and so are we.
Today was my day off from the theatre (and my kids never have classes on Friday) so we decided to take advantage of the beautiful near-spring weather and take our Whole30 show on the road. We went to one of our gorgeous nearby beaches and had a tasty and healthy meal.
The fun thing was that it was probably easier to pull this lunch together than it would have been if we’d been it the conventional gotta-have-a-sandwich way of thinking. My girls just packed some fruit, carrots, almond butter, the ranch dressing made from the Whole30 recipe, and some hard boiled eggs. Delish!
This was our view as we ate:
Pretty, right? As you can see, the clouds were rolling in, and it was a little chilly. But here in the Pacific Northwest, we take all the non-rain we can get. And the rain did come…on our way home♥
Now, my daughter is busy making stuffed peppers from the Whole30 book. It smells so good, I’m barely even pouting that I won’t be able to put any cheese on top.
